Instructions

  1. 1

    Preheat oven to 400 degrees F (200 degrees C).

  2. 2

Trim the ends off the Brussels sprouts and halve them. If large, quarter them.

  3. 3

Cook the bacon in a large skillet over medium heat until crispy. Remove bacon and set aside on a paper towel-lined plate. Reserve about 1 tablespoon of bacon drippings in the skillet.

  4. 4

Add the prepared Brussels sprouts to the skillet with the bacon drippings. Add olive oil, salt, and pepper. Toss to coat.

  5. 5

Spread the Brussels sprouts in a single layer on a baking sheet.

  6. 6

Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.

  7. 7

While the Brussels sprouts are roasting, chop the cooked bacon into small pieces.

  8. 8

In a small bowl, whisk together the maple syrup and the chopped cooked bacon.

  9. 9

Once the Brussels sprouts are tender, remove them from the oven. Drizzle the maple-bacon mixture over the sprouts and toss to combine.

  10. 10

Sprinkle the pecans over the top and return to the oven for an additional 5 minutes, or until the pecans are toasted.
