
Quick Chipotle Chicken Tacos
A fast and easy version of chipotle chicken tacos, perfect for a busy weeknight meal.

Dice chicken breasts. Finely chop 1 chipotle pepper and mix with 1 tbsp of adobo sauce. Juice half a lime. Chop cilantro and finely dice a quarter of a red onion.

In a bowl, combine chicken, chopped chipotle and adobo sauce, lime juice, garlic powder, cumin, salt, pepper, and 1 tbsp olive oil. Toss to coat.

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes, stirring occasionally, until browned and cooked through.

While chicken is cooking, warm the corn tortillas according to package directions.

Assemble tacos: fill warm tortillas with cooked chicken, then top with diced red onion and chopped cilantro.
