Bring 4 cups of water to a boil in a large saucepan. Gradually whisk in the polenta. Reduce heat to low, cover, and simmer, stirring occasionally, until thick and creamy, about 20-25 minutes. Stir in Parmesan cheese, salt, and black pepper.

While the polenta cooks, heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Remove sausage from skillet and set aside, leaving drippings in the pan.
