
Stuffed Italian Zucchini Boats
Tender zucchini halves hollowed out and generously filled with a savory mixture of Italian sausage, breadcrumbs, herbs, and cheese, then baked until golden and bubbly.

Preheat oven to 375F. Halve the zucchini lengthwise and scoop out the seeds and some flesh to create a boat, leaving about a 1/4-inch border. Chop the scooped-out zucchini flesh and set aside.

In a large skillet, heat 1 tbsp olive oil over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain excess fat.

Add chopped onion and garlic to the skillet and cook until softened, about 5 minutes. Stir in the reserved chopped zucchini flesh and cook for another 3-4 minutes until slightly tender.

In a large mixing bowl, combine the cooked sausage mixture, breadcrumbs, Parmesan cheese, parsley, oregano, basil, egg, salt, and pepper. Mix well.

Brush the inside of the zucchini boats with the remaining 1 tbsp olive oil and season lightly with salt and pepper. Fill each zucchini boat generously with the sausage mixture.

Place the stuffed zucchini boats on a baking sheet. Bake for 25-30 minutes, or until the zucchini is tender and the filling is heated through and golden brown on top.
